Seared Scallops with Mimosa Dressing |
Ingredients:
-2 pounds sea scallops
-2 teaspoons Cajun seasoning
-2 teaspoons olive oil
-1/2 teaspoon salt
-Dash freshly ground pepper
-1 tablespoon olive oil
-2 teaspoons unsalted butter
-2 teaspoons parsley, finely chopped
-2 teaspoons fresh dill, chopped
1. In a food storage bag, toss scallops gently with the Cajun seasoning, 2 teaspoons olive oil, salt, and pepper
2. Refrigerate for about 1 hour
3. Heat the 1 tablespoon olive oil and 2 teaspoons of butter in a large skillet over high heat
4. With tongs, arrange the scallops in the hot fat and cook for about 2 to 3 minutes on each side, or until nicely browned
5. Serve with Mimosa Dressing and herbs
Mimosa Dressing:
-1/4 cup honey
-1/3 cup orange juice concentrate
-2 tablespoons white wine vinegar
-Salt and fresh ground black pepper, to taste
1. Combine honey, orange juice concentrate, and vinegar in a medium saucepan
2. Simmer for 5 minutes, or until slightly reduced
3. Add salt and pepper to taste
